This weekend was so full of good, wholesome yet easy foods and I have to say, I kind of love not having to start a Monday feeling bloated and blah. Apparently yesterday was national ice cream day and I’m not going to lie and say I didn’t want some, but I survived without it (and I will probably celebrate August 5. For breakfast.)

Instead of catching up on the food network like I usually do after Sunday dinner, I made mayonnaise for the first time! I say it with an exclamation mark because I’m 110% serious when I say this was exciting for me. I’ve seen a lot of whole30 mayo recipes but have never been brave enough to try them, but after seeing a youtube video last night that it could be done in 2 minutes or less, I was sold. I used this recipe, straight from the whole30 website, and it was super easy. I don’t own an immersion blender and have never used one before last night. In my head, the mayo was a disaster waiting to happen but luckily everything turned out great and I am now a professional mayo maker (and eyeing this cute guy because apparently adorable immersion blenders exist.) I made the regular mayo for egg/chicken/tuna salads, but plan to add garlic & herbs to some of it to use as an aioli for burgers and fries this week. I even found a bang bang shrimp copycat recipe using this so life is about to get really magical.
